I needed to get meat back into my life – and quick – so I made this incredibly easy and super delicious casserole.

Ingredients:
4 teaspoons butter
1 lb boneless skinless chicken breast (cut into small pieces)
1 cup chopped white onion
1 can cream of chicken soup
1 can chicken broth (I used chicken bouillon and made broth)
1 can Rotel Tomatoes (your preference on hotness – I used the original kind)
1 package corn chips (your preference)
4 cups shredded cheese (your preference – I used Mexican-style taco blend)
I also added a can of sweet corn to add more vegetables and because it already has a yellow theme. After trying it, I would definitely keep the corn and also throw in some jalapenos, perhaps some green peppers, as well as maybe a can of beans. That’s what I love about casseroles – you can throw in just about whatever you want!
Like most of my recipes lately, I started by chopping up the white onion.

This week, just like last week, I was on a kick to make a more healthy meal. The chili became boring after a while (I think because it had no meat and I’m a meat-loving gal), but I already had plans for another meatless recipe: Spaghetti Casserole. This dish included many things I already had on hand and the rest of the ingredients were very inexpensive.

Ingredients:
6 ounces uncooked spaghetti (I bought thin whole wheat spaghetti)
1 tablespoon butter (I use Country Crock)
1/3 cup shredded Parmesan cheese (I used grated)
1 jar (26 ounces) meatless spaghetti sauce
2 cups chopped green pepper
1 can (14-1/2 ounces) diced tomatoes, drained
1 carton (8 ounces) part-skim ricotta cheese
1 can (8 ounces) mushroom stems and pieces, drained (I left these out)
1 small onion, chopped
3 garlic cloves, minced (garlic powder is much easier for me because I have it on hand)
12 fresh basil leaves, thinly sliced (dried basil leaves will work fine)
1/2 teaspoon dried oregano
3 cups (12 ounces) shredded part-skim mozzarella cheese, divided

Ever since Ash Wednesday and all the talk of giving something up, I’ve been on a healthy food/exercise kick. I usually exercise at least three times a week, but I want to work out more because it is such a great stress reliever and it makes me feel great about myself. In addition to that, I thought it was time to find some recipes which are inexpensive yet filling and healthy. I found this Chunky Vegetarian Chili recipe and new we were destined to be together forever. I am a huge chili fan, but I have never had a vegetarian version before. It was exciting! All the beans in this recipe I think definitely make up for the lack of meaty protein, as well as my eggs for breakfast and ham sandwich for lunch, so I don’t need to worry that I’m overworking myself without any protein to rebuild.

Ingredients:
1 medium green bell pepper, chopped and seeded
1 medium onion, chopped
3 cloves garlic, minced (I used garlic powder instead)
1 tablespoon vegetable oil
2 (14 1/2 ounce) cans Mexican-style tomatoes, undrained (I could only find Southwestern-style tomatoes)

I hope everyone had a great Valentine’s Day! San and I had a great day – it was one of the first full days we’ve had together since early December, so it was a much needed day to spend together. We did not go out to a fancy dinner, but we made one and went out for dessert, and we did not splurge on gifts, but we did make each other a card. It was a perfect day! I’ll share some recap photos, but I also wanted to fill you in on the big meal – Chicken Marsala. I do no have many pictures of the process of making this, but it’s really simple. San doesn’t like the added stress of snapping photos while cooking, so I let him off the hook this time!
Ingredients:
4 boneless chicken breast halves without skin
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon basil, dried (we also added garlic powder, thyme, parsley, and oregano)
3 tablespoons butter or margarine
3 tablespoons olive oil
4 to 8 ounces fresh mushrooms, sliced (1/2 to 1 cup sliced)
1/2 cup Marsala wine (we used Merlot because it was all San could find)

What’s better than a casserole (or hotdish as we say in Minnesota) and better than a cheeseburger – you probably guessed it: a cheeseburger casserole, or this recipe called Baked Cheseburgers. This recipe is perfect for a family but also perfect for a girl like me who likes to make one delicious meal a week and eat it everyday to save money and time.
Ingredients:
8 slices bread
3 tablespoons butter, softened
1 lb lean ground beef
1 onion, chopped
2 stalks celery, chopped (I skipped this)
1 tablespoon prepared mustard
2 tablespoons ketchup
1/4 teaspoon salt
1/8 teaspoon pepper
1 egg
3/4 cup milk
1/4 teaspoon salt
1 cup shredded sharp processed American cheese (I used mild cheddar)
This was almost a perfect ingredients list because I had just about everything on hand. It was a lot of bread to get rid of at once, but bread is cheap, so I didn’t worry too much about it.
